The UI disappears when i press play or settings after launching the app. It still exists but is transparent. By blindly tapping i accessed one of my worlds and saw the controls (arrows, jump, sneak, chat, emote and menu) have also disappeared. The settings UI is still transparent when attempting to access from pausing the game (clicked blindly to find menu). On the official Minecraft Reddit 8 people have said they too are experiencing this issue.
To reproduce the issue, launch the app and press play. The list of worlds/servers etc UI should never appear (it is transparent but still exists). After blindly tapping to access a world, the UI of movement control buttons (forward, backward, right, left, jump sneak) are also invisible. As are the chat, emote and menu/pause game icons. They still work but are transparent. When pressing settings (both after launching app and pausing game), the UI is also invisible.
The expected result is that when i press play after launching the app, the list of worlds/servers appears. That when I’m in game i can see the controls and icons for chat, emote and menu. That i can press settings and see them.
The actual result is that the worlds/servers list, the controls and icons, and settings options and invisible but still retain function

Same experience with iPad 10th generation, on iOS 26.6 and 26.7. MC 26.51 loads to black after Mojang Studios red splash screen, appears to hang on black screen for about 20 seconds, then dappled forest bg loads and then sometimes the Play/settings/Realms buttons, paper doll in bottom right is glitchy, mostly invisible. the screen tap gestures are triggering different menu actions than what is shown on screen. In game HUD is missing.
