Insta Crash, only way to resolve is to rollback to latest official release.
Reinstall of Minecraft does not resolve the issue, neither does resetting the application from within the application settings.
Confirmed rollback to latest none preview build of windows 10 operating system works 100%

Firstly: Do you mean that the Minecraft Windows 10 Beta version 1.2.0.22 will only work if you use a non-preview build of Windows 10 (operating system)?
Also, you've mentioned that you've reinstalled the game; have you tried deleting all of the game data before reinstalling? If not, you might want to try the following:
Backup your MinecraftWorlds folder (if you want to save your worlds) (Device storage > games > com.mojang > minecraftWorlds)
Uninstall MCPE
Delete the com.mojang folder (Device storage > games > com.mojang)
Reinstall MCPE
Run MCPE and if it works restore your MinecraftWorlds folder
Sometimes a clean install of the game will help with these kind of issues.
