White leaves on spruce trees

I was walking around in my survival world looking for wood on a mountain and there were several spruce trees around. A bunch of them had white leaves which confused me so I took some screenshots, then I broke a leaf block and it updated all the blocks around it and made them white.

This is a feature of Bedrock Minecraft. The white represents snow/frost on the leaves. It happens in cold biomes or in any biome where the altitude is high enough for the air to be cold. I'm not sure about the sudden propagation to other leaf blocks, though. That might be a bug, but it's hard to say from your screenshots which ones might have been updated this way.

Auldrick, thanks for confirming that... I thought it was an oddly specific colour and the block update thing is shown in the first 2 screenshots, I broke a white leaf block close to the green leaf block and the second one shows what happened

It's supposed to be like that while snowing.
