Only pigmen are spawning in the nether in my realm. Doesn’t change whether is on hard or normal. As well, I hear some Ghast noises but there are no Ghast anywhere to be seen.

Mobs should be despawning... That's an issue. In a survival world there's almost no way to know where all the cave systems are so you end up with one cave with the mob cap and no mobs anywhere else in the world.
I have decided to stop playing the game right now because it's not playable. You need mob drops in order to play the game right now you have problems finding a single sheep let alone anything else that is useful like slime or creepers

This is a result of the bedrock spawn mechanics and the fact that hostile mobs do not despawn in bedrock because the chunk they are in is unloaded beforehand. Since you aren't killing them, eventually they are the only mob left and no new mobs will spawn in. You could try going to an unexplored area to see if that will help. Short of that, you will have to set up a safe way to kill the pigmen. Try to do it in an open area where you can see the whole ticking distance. If they try to path to you in a round about way that takes them out of the ticking area then they can be unloaded while still agro, which can make for a nasty surprise later on. 2¢
I voted for the issue because Mojang needs to do something about it eventually.
