Don't know if this helps but I have noticed that tridents that have been thrown by drowned will make the pick-up sound and disappear but do not show up in your inventory. However, if you kill a drowned and the trident appears as a floating icon it is pick-upable.

Per https://minecraft.gamepedia.com/Trident, if the drowned threw the trident, this is working as intended. Only tridents dropped when a drowned is killed can be picked up.

We dont use the wiki as a official source, but in https://www.minecraft.net/en-us/article/taking-inventory--trident it does say
"Oh yeah – finding tridents. There’s only one way to get one – defeating a drowned. Only a few of the drowned carry tridents, and once killed only a few of them will drop will that trident. So don’t charge into a mob of drowned expecting to come out swimming in tridents. You might only get one or two at best."
