I have found that the structures for Underwater Ruins have the solid blocks treated as water logged such as the stone bricks, mossy variants, and even the gravel or sand at the base of the structure are water logged. This creates inconsistencies with what blocks should or shouldn't be water logged. I tested this out on icebergs and basic underwater terrain and did not find them to be water logged. I could even use an empty bucket on gravel to pick up water. The blocks would need to be mined up and replaced in order to create a viable air pocket in with these structures in tact under water. I've searched for other reports of this but I haven't seen any so I figured I should report this one myself. I'm more experienced with the Java version of the game but wanted to try Minecraft on my Switch so I figured this to be a bug worthy of attention.

Hey Jeffrey, yes I isolated the blocks by placing new ones around it. Whenever the blocks I placed were removed water would flow directly from the solid blocks. I didn't use sponges or lava either. I tested this by creating gaps of air above, to the side and below the blocks of the underwater ruins. As I stated in my original report I could even get a bucket of water out of these blocks which shouldn't be water logged in the first place.
I was able to post it to my Twitter feed... sorry i don't have a capture card or anything like that.. here's the link:

I had this experience in Win10 Bedrock, as well. I tried making an underwater base where I found a ruin's chest and was surprised to find that all of the sand around me kept flooding my newly formed air-space! I couldn't tell if it was a feature or not. Guess I know now.

I have experienced this same issue with a world that is currently hosted on realms. In an ice biome, I filled/covered an underwater ruin with sand and gravel. I have found that the stones blocks act as a water source block. I have placed sand, gravel, dirt, and cobblestone next to each of these blocks and all the mossys stone bricks and chiseled stone bricks act as if they were water-logged.
You probably picked up the water next to the block or the water source you were in. Did you try isolating the waterlogged solid blocks? (Place blocks around to create an enclosed space to see if the water flows from those blocks, DON'T USE sponges or lava)
