When trading with any of the new villagers, it will say their profession but it will have the wrong trades. Example: Stone mason has butcher trades. Trades are normal with the old style villagers.

I am also having this issue on the PC bedrock edition. mine is a little different they will get turn to farming or stone cutter but will switch randomly within the village if they wander around.

I am having a similar problem. Using experimental gameplay,I spawned some villagers in a flat world,and placed some work stations (cartography table,lectern etc.) and when they claimed them,they had the wrong trades. For instance,one villager that clamed a cartography table looked like a cartographer and has the Cartogropher name,but hase cleric trades.
