Steps to reproduce:
Lock any villager profession by buying anything from him (let's say you bought emeralds by giving him carrots)
Now Save & Exit
Open your world again
Go to the same Villager and there is a chance his trades have changed (buy emeralds for potato now for example)
As I said, there is a chance, this has happened to me 3 times now but only with specific villagers

Alright, so, how videos like this: https://www.youtube.com/watch?v=yf-GpbqDvF4 are made?
Because this whole video consists in... locking villager's trades? And before Pillager update a villager had the same trades forever and ever, now to have a Villager keeping his trades you gotta trade with him once, but this bug makes him change his trades even after being traded with...?
Totally not a feature, otherwise the video I liked for example would never exist.
