When exploring randomly, sometimes i come across these formations. This time it is comprised of dirt, coal, and stone, but the last encounter was similar, except made of spruce logs and leaves, plus it was suspended in midair. Use seed "poy" to recreate, just walk past the village and you'll see it.

Second time. First was on LAN with a family member. Also, we encountered another a bit ago, but strangely it was only visible on her screen. Side by side looking at same place, it was visible on her screen but not mine. That makes 3 times.

Not sure if it matters, but the first time it was in a spruce biome, and the formation was made of spruce and leaves, the second time it was stone as shown above, and the third time was in a birch biome and was made up of birch and leaves.
