OK, what?? Yesterday I reported MCPE-58033. TL;DR Plants try to generate in midair
Today, I loaded into the same world.
Since loading the world, I had not broken, placed, or done anything that would cause any change to the blocks. (e.g. i didn't open any chests, etc.)
But now, near the same spot I saw the midair plants, now there is a grid of floating grass and grass blocks.
I will try reloading several more times to see if the glitch intensifies.
