I bought each of my villagers in to my trading hall one by one. Gave them a work station and locked them in, all seems well then after a short time they seem to random swap work stations usually after a day cycle. Leaving them unable to reset their trade unless I move them all around again.

Need more details on how you set up that created village where your trading hall is housed in.
Do you and others randomly sleep in different bed that may have interrupt leader's bed?
If you create a village by 1 bed with other beds for players to sleep in. Let leader have a access to its bed. Do not interrupt its bed by sleep on or break it.
