If you have logged it upload the iOS crash logs:
Settings > Privacy > Analytics & Improvements > Analytics Data > Select the Minecraft with the latest date & time stamp i.e. minecraftpe-2020-01-18-103630.ips
Share this file via email and upload to your Jira ticket system. Hopefully the team will see this and investigate.

Same here, will not load past the "Minecraft" loading screen. iPad 7th Gen, running iOS 13.3 - started freezing during gameplay yesterday, today freezes during loading.
