Raided around 6 nether fortresses and looted them for diamond horse armor... Found 0...
I then checked in with a few in creative and xray to find the chests super fast and could not locate any diamond horse armor after trashing a few nether fortresses...
I am not sure if this is a bug or if I am just very unlucky because diamond horse armor has an 11% spawn rate in minecraft bedrock in nether fortresses only (the highest in the game)... I would appreciate someone helping me out with this, thanks

According to Wiki in Minecraft Bedrock diamond horse armor can be found in Stronghold chests (2.4%) and Jungle Temple chests (4,4%) - so you'll likely not find it in Nether Fortress.
Perhaps they'll change it while doing parity related changes.
