I met the requirements for both of these trophies and they won't unlock. I've seen pretty much every biome within a single survival world, except maybe some hill variations, let alone the 17 that are required for the trophy. For the Overkill achievement i got a smite 4 diamond sword , drank a strength 2 potion and killed some zombies, drowned and skeletons which should've given me the trophy.

As per the original reporter, only the following two trophies will not unlock for me, despite having met the criteria:
Overkill
Adventuring Time
I have all other achievements in the main game so have a 95% completion for trophy completion. I have been continuing to get achievements in the expansion packs, so trophies are working in general. I am also playing on Playstation 4 and only purchased the game when Bedrock was released for PS4. I am playing in Survival on Normal difficulty, do not have Cheats Activated and have never switched to Creative. PS4 is showing that I am playing version 2.06
For Overkill, I have seen that there are other posts online where some have struggled to get the achievement and others who found it really simple despite apparently doing the same things. In my case, I have tried different levels of enchanted swords.
Diamond Sword enchanted with: Unbreaking III, Sharpness III, Looting III and Mending I
and also a Diamond Sword enchanted with only Smite IV.
In both cases I have achieved one hit kills on undead mobs using a Potion of Strength 2 then sprinting, jumping and attacking. I have also tried attacking while falling from a height, but the achievement still does not unlock. I saw one post suggesting that exactly 9 hearts damage have to be dealt for the achievement to appear, but I believe I have followed the same method they used (Sharpness III on a diamond sword) and still cannot get it.
For Adventuring Time I am quite certain by this point I have visited the majority of the biomes, not just the 17 required for the achievement. I have a completed map wall which is 6x6 at map level 2 of 4 which contains a substantial amount of biomes on its own as well as having been to the Nether, the End / End Cities. I thought I would go out of my way to manually visit different biomes and step foot on them trying to get the achievement to unlock and I stopped counting at 17 knowing that I have definitely been to more than this while playing the game in general (I have also been to jungles, roofed forests, bamboo forest etc..):

Sooooooo 😃 Last night I tried something different. Impaling IV and Riptide II on a trident - charged at a drowned under water and the Overpowered achievement appeared immediately! Still feels bugged to me given the discrepancies in what people have had to do to get the achievement - but I’ll leave that to you to decide. Maybe it’s meant to be this specific.
Adventure Time - still struggling. I Have been using my Elytra to get around landing in various biomes, jumping into portals to visit different lands and wandered between between them. One Achievement left - hopefully it’ll realise at some point and appear, but again - feels bugged. I watched a “Minecraft PS4 Survival: Platinum Trophy” playthrough by POGProductionz on YouTube and during episode 4 (so maybe 4 hours into the game), having visited far fewer biomes than I have been to, his adventuring time trophy unlocked - videos from 2017:

@unknown: Both you and the original reporter make reference to trophies. Trophies were an implementation of achievements that was used only in console editions of Minecraft (those created and maintained by 4J Studios). In the case of the PS4, the console edition was named Minecraft: PlayStation 4 Edition and that is what appears on its title screen, along with the 4J Studios logo.
Support for the PS4 Edition ended in December, when it was replaced (at no cost to PS4 Edition owners) by the Bedrock version of the game. PS4 Edition owners can continue playing it alongside or instead of the Bedrock version, but bug reports are no longer accepted. Until now, we've been assuming that you referred to achievements as "trophies" simply because it was the terminology you were used to from playing PS4 Edition, but now I'm starting to suspect that you're actually still playing PS4 Edition, and linking a video about trophies and recorded using PS4 Edition confirms that suspicion.
If you are, in fact, reporting a bug that prevents you from earning a trophy in PS4 Edition, I'm afraid you're too late. This bug tracker project (MCPE) is only for reporting bugs in the Bedrock versions of Minecraft. There used to be an MCCE project for console editions, but since those have all been retired and are no longer supported, we no longer accept bug reports in that project.
@Auldrick Apologies for any confusion. I mentioned in my post 6th June that "I am also playing on Playstation 4 and only purchased the game when Bedrock was released for PS4". I did not own the original "Playstation Edition" and have only played Bedrock edition.
Trophies are simply the Playstation implementation of what tends to be known on other platforms as "Achievements".
The only reason I linked to a YouTube video was to demonstrate how easy it used to be to unlock the "Adventuring Time Trophy" whereas I have visited significantly more biomes and spend a lot longer and still cannot get the achievement to unlock.
So for clarity, in my case, I am playing on PS4 Bedrock Edition. The Trophy/Acheivement for Adventuring Time will not unlock.
Ah, very good then. Thank you for clearing up my misunderstanding about trophies, too. I thought they were common to all the console editions, but I think I understand now that they're common to all the PS4 editions instead.
All: We have two people both saying they're having a problem earning both trophies. I'm going to go ahead and confirm this so we can pass it to the developers, but it would be very helpful if additional people with this issue would upvote this report and add comments with any additional information they might have. It might also be helpful if someone could make available a copy of a world in which this is occurring, and optionally mention their gamertag so we can zero in on their achievements. If the world size is >10 MB, it can't be attached directly; instead, you could upload it to OneDrive or a file sharing service and give us a sharing link to it.

We're already tracking these issues in MCPE-62221 (Overkill) and MCPE-64281 (Adventuring Time), so this ticket is being resolved and linked as a duplicate.
