My villagers keep changing professions! I put one in a minecart and he was nowhere near a profession block but he still changed. And the same happed with another one!

lock their trade if you want them, this is because they can't pathfind to their claimed workstation they'll just look for the nearest workstation e.g (stonecutter, brewing stands, blast furnace,)
