My Villages haven't been able to spawn any Iron Golems.

That's not a bug? All villagers have to be grown and have jobs to spawn a golem? So the only way a natural spawning village can have iron golems is if a player interacts with the village..... that seems like a bug to me.
I remember the village children dancing and sharing flowers with the golems in the past ... villagers are sad now. lol
We're tracking this issue as MCPE-65202, so this ticket is being resolved and linked as a duplicate.
If you would like to add a vote and any extra information to the main ticket it would be appreciated.

Generally you only need 10 villagers and 20 beds. In 1.16 all villagers need to be able to reach their workstations, so if you have more villagers you might need more workstations. Or kill off the extras and see what happens. There are several technical videos online for how to build iron farms and their spawn mechanics.
