The inventory icon of any banner is the snout banner pattern.

Get a banner
See the inventory icon
What I observed
Inventory icon is Snout
What I expected
Inventory icon is a red/blue/green etc. banner instead of Snout
Note
When placed down it is the respective color banner
Works in any gamemode.
