I have noticed this when playing on my phone as well. On my survival world, i got a pair of elytra in the end, so i made a bunch of fireworks and started flying around. eventually, there were random chunks missing. Not on the edge, but in the middle, and around already loaded chunks. and here's the real weird part... you can walk in them, but cant see anything.
