This is a bug because of a bug. I got glitched off of Minecraft(1st bug) and when I logged back on my minecart chest with my enchanted diamond pickaxe, torches, water bucket, flint and steal, and signs(2nd bug).(the worst part is this is the second mending diamond pickaxe I have lost to a bug.

Same issue for MCPE on xbox one x. Minecart chests and minecart hoppers have gone missing when logging back into game. Disappearance of minecarts/minecart chest/minecart hoppers in motion is inconsistent and seems to be linked to loading/unloading of chunks and game.
