After installing the newest update, my children are no longer able to access split screen/multiplayer mode. All 4 of them being able to play together was the only reason that they bought this version, and now they refuse to play it.

I have the same issue, mostly. Split screen works for me in local worlds, but anything else gives me "Split screen unavailable. A second player can't join right now."
Please note that we have Nintendo Switch Online (family plan specifically). Also the microsoft account settings for online play have been set correctly, since each player on their own can play online.
This is with:
one paired set of joycons and a pro controller;
The latest switch firmware;
The latest MC update (so actually 1.16.1);
On featured servers. Haven't tested realms.
