I threw gold ingots on the groud, next to a piglin.
What should happen: The piglin picks up the ingots and barters.
What happened instead: The piglin didn't pick up the gold.

I was in creative mode, so they shouldn't be hostile.
There is an option to barter by holding over them/tapping a button so the only problem is them not picking up items.
Experiencing the same issue, playing on the Xbox One Edition of Bedrock.
Whilst they are able to be traded with when directly given golden items, they are unable to pick up the item entity on their lonesome. This occurs in all worlds I've played on, both in and out of the BETA programs.
EDIT: I have resolved the issue: "Mob Griefing" MUST be enabled in order for Piglins to pick up entities!
You have to be wearing gold armor, they won't barter if they're hostile.
