Summary:
On mobile When you fly ,sneak button disappears so you can't sneak and that make redstone contraptions and builds that include GUI blocks too hard to build while you are flying. The "fly down to sneak" method isn't convenient and it is so hard to use it in complicated builds.
How To Reproduce:
Open a creative world on an android phone.
Try to fly by tapping jump button twice
Observed Results:
When doing step 2 you will notice that Flying mode makes sneak button disappears and that make it hard to build properly.
Expected Results:
Sneak button should not disappear while flying.

I have experienced this too; however it seems like this feature was intended. You can accomplish the mid-air sneak you need by holding both the up and down fly buttons at the same time. I still agree that a sneak button that works wether you’re flying or not would be a welcome addition to the mobile version of Minecraft.
