This bug occurred when I was trading with the piglins, I gave one a piece of gold ingot and, in return gave me a soul speed iron boots, or at least he was supposed to do that, once he threw the boots he immediately wore them before I got the chance to get them, this is an issue when you're trading with a large amount of piglins, so you'll have to kill the piglin that was wearing the boots. Sadly this only happened once and I couldn't recreate, so it might be just a case of bad luck, but who knows.
