Minecraft.Windows.exe Memory increases gradually and game becomes unplayable after about 5-10 minutes.
I have 16Gb Ram. I have tried with Windows Game Mode On/Off. Even when doing nothing the memory continually increases. When a friend joins from the LAN it becomes worse.
This was using the Winding River seed.
Screenshot 2020-07-05.1.png - shows 4GB after ~1minute.
Screenshot 2020-07-05.4.png - shows 11GB after ~8 minutes with only 1 player, with 2 players via the LAN / Friends tab it uses memory a bit faster.

The issue still persists on the latest update also. 1.16.20
Added a new world - Survival / Peaceful / Seed -1813740965 (Coastal Village)
Changed Simulation Distance down to lowest setting (4 chunks)
Left all other values to default
~5 mins later - 12Gb RAM used, movement degrades, cannot use the world. There is no way for me to manage memory settings.
Can someone please look at this!
This is still a problem. I have even tried using Optimal settings on the GEForce Experience settings. I have a GEForce RTX 2060 with the latest driver. 452.06.
AMD Ryzen 5 3600 6-core. 16GB RAM
I even tried signing up to the Xbox Insider Hub for the Minecraft for Windows 10 RTX Beta, although the registration says Pending, and then doesn't join with some Error...
Very disappointing experience so far......

Not sure if I'm having the same issue, but I'm running the same Minecraft version on Windows 10. I'm seeing RAM just keep increasing and 100% CPU usage just standing in a newly created world and not moving around at all. I can't let mine run as long as your's because it sounds like my system is going to overheat. Oddly, I don't have any of these issues if I'm playing on a LAN game or on the Marketplace - it only happens when I load a local world.
