One world I changed to creative and back to survival with no luck. I have also uninstalled and reinstalled the game from the X-box. I searched the issues and did not see this unless it's related to mob spawners, but not see a solution to fix it.

No, I double checked that in the first world, and had never looked at the settings since starting the second world.
There is a global mob limit of 200. If there are that many mobs within simulation distance of players then nothing will spawn during the natural spawn cycle. I have seen other reports like yours, where it turned out people had hundreds of chickens in their automatic hatchers.
I was also wondering if it's because I had been exploring, but taking a bed to skip the nights and then breaking the beds.
Breaking your bed does not affect any mob spawns. However, if you sleep every night monsters will not be able to spawn in most places on the surface. Overworld monsters only spawn in light level 7 or below.
Cleaning up old tickets: This ticket had been set to 'Awaiting Response', but has not received a response from the reporter (~3 months+) so is being closed as Incomplete. If you feel this is still a valid issue then please comment, or create a new ticket following the Issue Guidelines which includes steps to reproduce the problem.
