Some villagers switch their trades when you break and replace the workstation. This is after they have been traded with. For example a farmer that had the carrot and bread trade switched to potato and bread trades even though I had already traded carrots with it.

I can confirm. This happened a couple of days ago. All my librarians switched to fisherman even though we had already locked their trades.
