After 1.17.10 update, gameplay preferences are missing from the Edit screen.
*Explanation by [MCPE Mod] Auldrick:*
With release 1.17.10, your Realms or Realms Plus subscription now lets you have 3 worlds loaded into your Realm server at the same time (of which only 1 is active at any given time). Previously, your Realm settings included settings for the Realm/subscription and for the (single) world loaded into it on the same screen, available by clicking the pencil icon next to your subscription. Now that there are 3 separate worlds, each with its own settings, the settings screen is broken into Realm settings and 3 World settings screens.
The Realm settings include the Realm name and description. From here you can also change your invite code, send invites, manage your member list and permissions, manage your subscriptions, manage your Xbox Live club feed, and open/close your Realm. The Realms settings are accessed by clicking the pencil icon, then choosing the Manage Realm button at the top.
The World settings include the world name, difficulty level, game mode, and backups. From here you can also activate cheats, download or upload (replace) the world, reset the world, restore a backup world, and manage the world's add-ons. The World settings are accessed by clicking the pencil icon, choosing the picture button for the world you want to edit, and clicking the Edit World button that appears.
Note: Currently, if you click the Edit World button for an inactive world, it activates the world instead of opening the world settings. That is, it functions exactly the same as the Active World button that also appears. This is probably a bug, but it's not the bug described in this ticket.

I have tried that suggestion and the problem is that it overwrites the existing world, thankfully I did it on my oldest world that my friends and i aren't using anymore but it's still sad that that world is now gone...
Yeah I looked at that and the only backups were of the new world that it overwrote the old one with. If I could just roll back the realm to a previous save that had the original world on it this wouldn't be an issue. Edit* as you can see by the pictures when I go to "manage realm" all I can do is edit the name and description, if I click on the world and choose edit I can upload a backup but the backup file is only a few mega bytes, the version I downloaded a few months ago is almost 1.5 gb!
Ok, so the world my friends and I have been playing on is NOT on the list of 3 worlds... when I go to the edit realm screen. If I just go directly to play on it, without clicking the pencil icon to edit settings, I go straight into the realm we've been playing on. BUT if I go to the edit screen it prompts me to "activate" a world to use as the realm world, either my oldest single player world, a new blank one, or the celebration world. None seem to give me the option to "activate" the world that already exists as far as I can tell
That actually seems like a different bug. If you report that as a new issue, please try to be extremely clear about the order of selections / actions / etc, and a video might help there too.
Sooooo I feel like a heel.... umm.... I ASSUMED that the left most option that was labeled "my world" was my oldest single player world because it had the same name and thumbnail but I tried activating it just to see this morning and it was the world I was worried I had lost.... turns out the only bug was in my own competence...
Well, that's pretty much what we thought was happening, because something like that happened to a couple of us mods, too. Thanks for letting us know this is resolved for you now!
It's definitely confusing that the initial world name is not the same as the realm name. Per REALMS-8575, the developers are looking into the UI design to see if additional changes are warranted.
Please try the following:
Click on one of the 3 realms in the window
A button labeled "Edit World" should appear
Click that button to access the settings for that world
Please let us know if that does not work for you.
