This is actually quite interesting, If I were to take an educated guess it’s probably because the ender pearl teleports you through the portal, but since you enter the end portal in the following tick, it’s processing as if you’re going through the portal in the end and not going through the portal in the overworld, so it treats it as if you completed the game by jumping through the portal in the end.

It’s probably the recourse pack or a mod incompatibility issue if you’re playing modded. Have your tried disabling the recourse pack or using a different one to see if the item texture is still missing?
