I was directed here by a previous helper for reporting the same thing so I thought I would input my experience to help. Our realm has seen mostly horses and villagers (all with nametags and fully interacted with) disappear quite randomly. Also, a fox which was bred by another player. I haven't yet checked if these are next to chunk edges, I'll look into it and update this comment. It is important to note that two horses were very close together in one pen when they vanished which works with the chunk boundary issue but then on the flip side a single villager locked in a house with other villagers in a completely fenced-off area disappeared which seems odd with the current chunk boundary problem suggestion.
