I've been having this same issue last week and what I recommend doing is, before you go through the end portal, get yourself some ender chests and backup your world, if it's copying it via Minecraft, uploading a save to PlayStation Plus or whatever makes you feel comfortable and so is easy to recover in case you die and lose all your stuff. I was lucky enough to get myself a save back from right before I went end busting and I've used ender chests on that save. I placed an ender chest next to my bed in the stronghold before I went in, and then I placed an ender chest next the portal in the end after killing the dragon. Right before I went back through the portal I crafted Shulker Boxes and put all my stuff in there and then put those in my ender chest and went through. I had all my stuff back in the overworld thanks to an ender chest 🙂
