I ran into the same problems on my kindle fire a few weeks ago. After extensively exploring the outer parts of my world for about a month (and significantly increasing the memory size as a result, about 382 MB), I ran into the exact same problems. My world would load properly, and would remain OK as long as I do not move or if I move a few blocks at a time. But as soon as I moved more than about 5-6 blocks at a time, all of the problems you encountered appeared, including the sun disappearing. The GUI and the hotbar would still work, but you could not see the controls. The chests would also disappear, but you could still access them but not see their contents. I was not building any fences when I encountered this problem.
