I am having the same issue. the cows work, the pigs work. the chickens are not.
-The spawn egg has not changed
-I tried using the unchanged spawn egg in temperate, warm and cold biomes with no luck only white chickens. the cows and pigs do.
-the brown and blue eggs are there but using them in any biome results in white chickens.
After looking for others who had similar issues they said a mod/resource/behavior pack was causing the issue for them. Iām completely vanilla.
