I'm not 100% sure as I've now deleted the world, but I did see a replanted oak sapling so I'm guessing it was what you have suggested and only my player resetting
Having the same issue on PS4 where it crashes every 10 mins or so and when I log back in some items in my inventory disappear. Just lost 3 shulkers of cobbled deepslate and my shulker full of my diamonds and netherite.
