I had a well lit, fenced in village about 20 villagers strong, each with their own work station and bed. A couple of cats, sheep, horses, and cows. I was simply building a new house within the border of the village with concrete and deepslate when I saved the game and closed out. I went back in about 10 minutes later and everyone was gone. The amount of time I had been on before I saved and closed was about an hour and I'm in survival mode. This also happened in two other saves as well. Pretty much the same way.
