I do experience the same problem in the end (Save to say everywhere), rarely you meet up with an enderman. Took a picture to show you how it looks; Usually the farm is filled with aprox. 11-15 enderman.
In the image [Broken_Ender_Farm] you'll see that there is NONE, nor are there any in the middle, where you spawn while entering / leaving the end.
Changing difficulties didn't work. If someone has any other ideas, please let us know 😃
