Following MCL-19830, the problem is not solved but only avoided.
I had to disconnect from the internet or use a command to launch the app every time.
I tried to open the launcher with the internet connection today to see if the problem has been solved. It crashed again and now trying to open the launcher would result in a system notification stating "the application 'Minecraft.app' can't be opened". Using Terminal will instead show:
The application /Applications/Minecraft.app cannot be opened for an unexpected reason, error=Error Domain=RBSRequestErrorDomain Code=5 "Launch failed." UserInfo={NSLocalizedFailureReason=Launch failed., NSUnderlyingError=0x600001885200 {Error Domain=NSPOSIXErrorDomain Code=111 "Unknown error: 111" UserInfo={NSLocalizedDescription=Launchd job spawn failed}}}
