Are you sure this is not a hardware issue, i have seen many issue like this caused by a bad GPU

The pictures I have uploaded are taken from my single-player world. The villagers have no workstations and still keep their professions, the ones with the villager GUI have not been traded with. I have been AFK for 2 hours without them losing their profession. I have attached screenshots of my entire hall to show that there is no workstations.
