I’ve just turned 9 villagers to zombies then cured (all level 2 librarians or higher) and none have offered a discount since updating to v1.18
I keep having this issue on and off. Some days it works and others it doesn’t, some days it writes nothing at all and I also have the issue with renaming things!
The despawning aspect has also happened to me several times now. It’s infuriating having to zombie them then cure them a million times to get their trades nice and low, and then they disappear so I have to do it all over again.
Have you traded with it before turning it into a zombie? If not that’s your problem. You need to lock it’s trade first
The exact same thing has just happened to me, also for the second time. The only villagers that have stuck around are ones I’m honestly not bothered about.

Villagers keep disappearing (have not been killed, also not on a chunk border)
This issue has happened 3 times in total now, each time they have been safe from mobs and have not been on a chunk border (this has only happened to me in previous worlds when on a border so I made sure no one was this time!)
This is a realm world so is used on multiple devices, screenshots taken on Windows 1.20.12.
