My kids are having this issue on their iPads. They get one hour of screen time on Minecraft, then, when my wife or I approve more time, when they switch back to Minecraft, the sound no longer works. If they close the Minecraft app and relaunch it, then the sound works again.
They are on Minecraft version 1.16.50 and are both using 6th generation iPads with iOS 13.7. This issue has been happening since we started using iOS Screen Time, around one year ago.
