It most likely is a UWP issue (whatever that is) because I am also experiencing this with Bedrock Edition but only on the taskbar.

I am having this issue too and it is REALLY annoying because I find it much nicer to have my mc launcher on my taskbar and desktop, I have this issue with Bedrock edition too but only on the taskbar.
