@Jeff Brunet That's because Wolfenstein is built entirely different compared to minecraft. Believe it or not, it isn't actually a fully fledged 3D. But to make it short and compact, these things add up to the feeling of motion sickness: parallax, textures, viewing distance, and that damned stretching. For me changing the textures back to the old ones helped. And this leads me to believe that it's the fault of new textures and the main reason would be how detailed they have become.
