Occasionally the server will lose track of the client, and the client will continue doing things, but only client side.

Setting an Enderman on fire with flint and steel, or lava, will not make it teleport away.

Shooting an enderman with an arrow will stop it from being aggroed.
Cannot Reproduce
The Enderman will still take damage, and get caught on fire if you are using a Flame bow. That doesn't seem like it would be intentional.
