Sadly, uninstalling in general means deleting every file of a program. Going from normal Bedrock to Beta Bedrock keeps the worlds, but going back means uninstalling completely. It's always a good idea to have a back up world folder around. I have two back up folders. One for worlds that contains the worlds of Normal Bedrock, and one that contains the Beta Bedrock worlds.
I wish we had the ability to have both Beta Bedrock and Normal Bedrock installed. Sadly, I have to be opting in and out and going through the uninstall and install processes.
