I have seen this many times on my trading hall designs. I place a workstation, trade with the villager if I want to keep them, and place more workstations over time for more villagers. I'm thinking the villagers I trade with still lose their jobs, but it doesn't appear that way. They don't restock and other nitwit villagers or untraded villagers can steal the workstation.
