yeah i cured a villager back in 1.16.40 and he gave me 1 emerald trades and now in 1.16.100 he only subtracts 1 emerald from the full price
I think the reason they are expensive is that they are a vital item when getting really good enchanted armor and weapons/tools.
you just have to wait till the texture pack updates in the marketplace
my simply cubed texture pack Just updated for 1.16 (not 1.16.20) like 4 days ago so it can take a while

this happend to me back in 1.14
i just broke my whole beacon structure and replaced it
then i got the achievement
trust me i know how it feels to not get the achievement i panicked until i tried this.
i have also been annoyed with this bug... i play on my amazon fire (PE)
i believe it lets you claim the days reward at noon
