I have this issue too. I am playing on bedrock PS4, survival, peaceful mode. I made an aquarium at my other base a couple of months ago and it was fine, but I made a new one elsewhere yesterday 22 September 2021, and the fish were white, when I collected them they said 'bucket of white fish name'.
