I believe your issue with the bow is a separate bug where bows act up in the Nether.

I've recently lost one of my guardians to this issue. I've gotten used to my village cycling through villagers now. A few of them will be replaced as suddenly as they disappeared. This was fine until my best villagers started despawning and more villagers were disappearing than being replaced. This eventually caused my iron golem farm to stop working. A large amount of villagers (about 20 out of 50) are farmers on a large carrot farm so they provide carrots to the population, allowing them to breed without my intervention. Luckily, things returned to normal after a few weeks.

Also, does anyone know if this bug affects shulkers?
