I also have this message in my console log, but my server works fine. Ironically, I came across this thread because I wanted to make sure I would not have problems down the line.
So if your server isn't working it may well be due to some other factor than whatever is spitting out this error message.
I will say the only different setting I have is that armadillos are enabled, but I still don't have any 1.21 features or mods other than that.
