This issue happens all the time to me. I think it is because the pointer accidentally selects the items in the item bar below. I found that if I looked a little bit below the rock I am mining, the problem didn't happen. When I looked exactly straight to the rock, the problem would occur. I searched the options for VR controls, but couldn't find any options to solve this problem.
Please Mojang fix this, as it would make playing Minecraft in VR not enjoyable. Thank you
