I should have said - this was a new seed that I started after I completely installed the 1.16.0 update on the switch - not just after release.
Still having the same issue with new seeds following the Switch patch. Only one nether portal is created and all overworld portals link to it. Exiting from the nether takes you to the first overworld portal created (and if you destroy it the game creates one nearby). No matter how far away any other overworld portals are, they all link to the first in the nether and you can not exit the nether to any of these other portals.
It really sucks :/
